This super quick pancake recipe will avoid you going ‘flipping’ mad (sorry, had to be done!). You can customise this Pancake Day recipe with your own toppings and flavourings too. Calories: 63 per pancake
Ingredients: 100g plain flour 2 large eggs 280ml milk 1tbsp sunflower oil Lemon wedges Caster sugar
1. Add the flour, eggs, and milk to a bowl before adding a pinch of salt. Whisk the contents to develop a smooth textured batter. If you have time, allow the mixture to rest for 30 minutes.
2. Place your frying pan on a medium heat and gently wipe with the oil. When to temperature, add some of the batter to cook for 1 minute.
3. Serve with your choice of flavouring, we recommend a lemon wedge and a dusting of sugar.
