Meal of the Week - Minty Lamb Kofta Kebabs

Serves: 4 These tender lamb kebabs are tasty, healthy and can be enjoyed by all the family. The easy-to-follow Kofta recipe includes a zingy minted yoghurt and toasted pitta bread strips.

Step 1 - Dice 1 small red onion and 2 cloves of garlic as small as possible.

Step 2 - Add the onion and garlic to a bowl containing 500g lamb mince, 1 teaspoon of coriander, 1 teaspoon of ground cinnamon, the juice of 1 lemon, a pinch of salt, some black pepper and a beaten egg.

Step 3 - Mix the contents of the bowl with your hands before rolling into sausage shapes and inserting wooden skewers.

Step 4 - Heat a small amount of oil in a frying pan and add the kebabs. Cook for approximately 10 minutes, turning occasionally to colour on all sides.

Step 5 - To make the sauce, chop half a cucumber and a handful of fresh mint as finely as possible before adding to a bowl containing 200g of natural Greek yoghurt, the zest of 1 lemon and plenty of salt and pepper. Mix well.

Step 6 - Toast some pitta breads until crispy then slice into strips.

Step 7 - Serve the cooked kebabs with the sauce dip and toasted pitta bread strips.
