Prep time: 15 minutes
Cooking time: 35 minutes (plus 15 minutes marinating)
This simple salad is deliciously juicy and perfectly refreshing. It is also filled with lots of different vitamins and anti-oxidants, which help to protect the body against damage from free radicals.
Step 1 - Place 1 crushed garlic clove, 1 teaspoon of grated ginger, 1 tablespoon of soy sauce and 2 teaspoons of sunflower oil in a bowl and whisk together.
Step 2 - Add 2 large chicken breasts to the bowl and turn to coat both sides in the sauce. Leave to marinate for 15 minutes.
Step 3 - Place 750g of washed new potatoes in a saucepan, pour over boiling water and add 2 large sprigs of fresh mint. Cook for 15-20 minutes, or until tender.
Step 4 - Meanwhile, place 120g asparagus in a metal colander, cover and set over the pan of potatoes to steam. Cook for 5-10 minutes, or until slightly tender.
Step 5 - Discard the mint and drain the potatoes before cutting them into thick slices. Cut the asparagus diagonally.
Step 6 - Pre-heat the grill. Remove the chicken from the marinade and place under the grill, brushing frequently with the marinade and turning once. Continue until the chicken is cooked through and the juices run clear. Leave to rest for a couple of minutes before slicing.
Step 7 - To make the orange dressing, place ½ teaspoon of finely grated orange rind, 1 tablespoon of freshly squeezed orange juice, 1 teaspoon of Dijon mustard, 2 tablespoons of sunflower oil and 1 tablespoon of walnut oil into a large serving bowl. Whisk all of the ingredients together until slightly thickened. Season with black pepper.
Step 8 - Transfer the sliced chicken, potatoes and asparagus into the serving bowl and gently toss together to coat with the dressing.
Step 9 - Peel and slice one mango. Add this, along with mixed salad greens, to the bowl and toss gently once again.
Step 10 - Serve with lemon wedges.
