Meal of the Week - Choc Chip Rolo Dumplings

Serves: 6 This rich and sticky dessert recipe combines traditional Chinese dumplings with a melted filling of Rolo chocolates. At less than 100 calories each, these tasty dumplings provide the perfect chocolatey treat without disrupting your diet.

Step 1 - Place 150g of glutinous rice flour into a bowl.

Step 2 - Dissolve 30g of soft brown sugar into 50ml of boiling water. Pour the sugar solution and a further 50ml of cold water over the rice flour.

Step 3 - Mix the flour well and use your hands to get the mixture to form into a dough before kneading into a ball shape.

Step 4 - Dust a surface with some extra rice flour and knead the dough for a few minutes, until it is smooth.

Step 5 - Roll the dough out into a large rectangle. Cut the rectangle into four pieces and roll into smaller rectangles. Cut each rectangle into a further three pieces and form into small balls.

Step 6 - Make an indent into each ball with your index finger and place a Rolo in the centre. Once you have inserted a Rolo, pull the dough back over the hole and wrap it back into a ball.

Step 7 - Put the balls inside a large bamboo steamer that has been lined with baking paper, then cover and steam over a pan of hot water on a high heat for 10 minutes.

Step 8 - The dumplings should turn bright white when cooked and have a chewy, sticky texture. To check whether they are cooked, take a toothpick and pierce one of the dumplings. If the toothpick comes out clean, then they are ready.

Step 9 - Remove the dumplings from the steamer and roll into a bowl that contains three crushed chocolate chip cookies.
