This simple tortilla recipe is light, low-fat and deliciously satisfying. Learn how to create a tasty dish that combines chicken breast, beans, tomatoes, spring onions and cheese, all with less than 15g of fat.
Step 1 - Pre-heat the oven to 200C/390F.
Step 2 - Shred one large pre-cooked chicken breast before chopping four tomatoes and four spring onions.
Step 3 - Place a whole bag of yellow corn tortilla chips in an oven-proof dish before topping with the shredded chicken, chopped tomatoes and spring onions, half a cup of low-fat beans and a generous handful of Mexican cheese.
Step 4 - Bake in the oven for 5 minutes.
Step 5 - Remove from the oven and serve with a dollop of spicy salsa, sour cream and guacamole.
