Eggs Benedict

Breakfast is often referred to as the most important meal of the day, preparing you for the day ahead and providing you with the necessary source of energy to ensure the body is fueled. 

A staple ingredient of many protein rich breakfasts are eggs and this particular recipe provides this in abundance. 


Amount: Serves 4 | Prep time: 10 minutes | Cook: 5 minutes | Ready in: Less than 20 minutes


  • 220g fresh spinach
  • 1/2 lemon (juice)
  • 4 tbsp natural fromage frais (fat free)
  • Sea salt for seasoning
  • Freshly ground black pepper for seasoning
  • 1/2 tbsp freshly chopped tarragon
  • 4 slices of wholemeal or seeded toast
  • 4 large free range eggs, poached
  • 4 slices of ham



Placing the spinach in a large pan and then adding the lemon juice, gently cook for approximately 2 minutes until the spinach has wilted. Ensure that any excess liquid is drained. 

To prepare the sauce, season the fromage frais with the freshly chopped tarragon whilst seasoning with the ground black pepper and salt. Gently heat for up to 2 minutes, stirring regularly until the mixture becomes warm. 

Time for the fun bit! Begin by placing the toast on each plate and add a slice of ham to each. Spoon the spinach and then add the poached egg on top, add lashings of the sauce on top of each egg and then dig in!
